1 lb. Radiant Mix
3 c. raisins
3 c. dates, quartered (1 1/2 lb.)
2 c. walnuts or pecans, chopped
1/4 c. molasses or honey
1/4 c. dark fruit juice (grape)
1 c. butter
1 1/4 c. brown sugar
4 eggs
2 c. flour
1/4 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. mace

Directions:

Mix fruits & nuts, molasses & juice. Set aside. Cream butter, gradually add sugar. Then beat in eggs, one at a time, beating each in thoroughly. Add fruits & nuts then sifted dry ingredients. Mix all together thoroughly but gently. Bake in angel food pan lined with wax paper and center greased. Bake in slow 275º-300º for about 2 1/2 hours with pan of water on oven floor. Remove from pan and leave paper on cake until cool.

Radiant Mix is any mixed glazed fruits.
"I have better luck slowly removing wax paper when I take it out of oven. Also run a table knife around center to loosen. After it is cooled I pour on a little grape juice on top and wrap in foil tightly; set on plate and put in cupboard to let juice absorb & moisten cake."
