5 egg whites
1/3 c. + 1 T. sugar
2 c. coconut
1/4 t. vanilla
melted chocolate

Directions:
Directions:
Combine egg whites and sugar in stainless steel mixing bowl. Place over low heat. Beat, using hand mixer until meringue is smooth and forms peaks. Remove bowl from heat and stir in coconut and vanilla. Line baking sheet with parchment paper and drip meringue by teaspoonful onto sheet. Let stand 4 hours. Bake at 250º for 30 minutes. Dip in melted chocolate.
