10 oz. linguine, uncooked
2 tsp. olive oil, divided
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 small onion, thinly sliced
1 garlic clove, minced
1 lb. raw shrimp, peeled & deveined (or chicken)
1 14.5 oz. can fat-free, reduced-sodium chicken broth
1 tsp. paprika
1 tsp. onion salt or powder
1/4 tsp. cayenne pepper
1/2 tsp. ground black pepper

Directions:

1. Cook pasta according to package, omitting salt. Drain.

2. Add 1 tsp. olive oil to large nonstick skillet over medium-high heat. Add peppers and onions and stir-fry for 5 mins. Remove from pan and set aside.

3. Add remaining tsp olive oil to pan and reduce heat to medium. Add garlic and shrimp and sauté for 1-2 mins or until shrimp is done. [if using chicken - cook 7-9 mins or until done]. Add peppers back to pan.

4. Pour chicken broth, paprika, onion salt, cayenne pepper, and black pepper in pan and bring to a simmer for 1 min.

5. Serve shrimp [or chicken] and broth over pasta.

Angel hair pasta works well too. I start with less broth, and add a little more until you reach your personal consistency
