3 egg whites
3/8 tsp. cream of tartar
1 cup sugar
1 cup broken saltine crackers
1 cup chopped pecans
1/2 tsp. vanilla
1 package Cool Whip (small)
1 can cherry or blueberry pie filling (or make your own)

Directions:
Directions:
Beat egg whites with cream of tartar. Add sugar gradually. Fold in saltines, pecans, and vanilla. Bake in a greased 9x9" pan for 30 min. at 300º. let cool. Spread Cool Whip on top. Spread pie filling on top and refrigerate overnight. Double recipe for 9x13" pan.
