3 1/2 cups milk
1 cup sugar
1 cup shortening
8 - 10 cups bread flour
1 tbl. salt
2 tsp. baking powder
1 tsp. baking soda
2 pkg. yeast
1/2 cup lukewarm water
1 tbl. sugar

Directions:
Directions:
Heat 1 cup milk with sugar and shortening until they are dissolved. Pour into large mixing bowl and add remaining milk. Mix 3 cups flour, salt, baking powder and soda. Add to milk mixture--cover and let rise until doubled. Add enough flour to make soft dough. Place in greased container. Cover with plastic wrap and refrigerate.
When ready to bake, remove from fridge and knead. Work as little flour as possible into dough. Roll to 1/2" thick, cut into circles and dip edge in butter, then fold in half.
Place on greased baking sheet until doubled. Bake at 375º for 10 - 15 minutes. Makes 100 rolls.
Batter keeps 1 - 2 weeks in fridge. You can also use this dough to make cinnamon rolls, hamburger or hot dog buns, etc.

This is a great basic dough for making all kinds of rolls---I like to melt some butter with minced garlic and parsley and brush it on the rolls for garlic bread. Or you could roll a quantity of dough out into a rectangle, fill with grated cheese, form into a jellyroll and cut into pinwheels, then brush with the garlic butter. Go sweet or savory with this. Use your imagination!
