1/4 cup plus 2 tbl. fresh lime juice
3/4 cup olive or vegetable oil
2 tsp. sea salt
2 cups red onion, thinly sliced
Sliced hot peppers, optional

Directions:
Directions:
Combine first three ingredients and pour over thinly sliced red onions. Allow to marinate overnight in fridge. These may be served beside any meat dish, but are especially delicious when piled on a sliced pork tenderloin sandwich served on water rolls with lots of mayonnaise.

Leslie is an old friend from our FSU dorm, Deviney Hall. We all ended up in Tampa after marriage and graduation, and she entertained us often and well during our baby-making days. One of her standards was kind of a pre-slider, way before they were trendy. She would marinate and roast a pork tenderloin, slice it into thick rounds and serve on fresh little rolls from the Publix bakery, usually the Water Rolls. Those are a little hard to find at our Franklin Publix, but the Chicago Hard Rolls or something similar would work. Then she'd slather on lots of Hellman's mayonnaise, and top with a generous amount of her marinated onions. We always thought she was a great cook because she grew up in South America, but the truth is she's a great cook because she puts her heart into everything she makes.
