Ingredients: 2 1/4 Lbs. potatoes - Cut into Chunks 1 1/4 Cups Milk 1 Bunch of Scallions - Thinly Sliced - Plus extra to Garnish 1/4 Cup slightly Salted Butter 1 1/4 Lbs. Green Cabbage

Directions:1. Boil the boils in slightly salted water for 25 minutes or until tender.Drain and mash the potatoes with a fork until smooth. 2. Place the milk, scallions and butter in a small pan and set over low heat until just simmering. Cook for 3 minutes until butter has melted and scallions have softened. 3. Cook the green cabbage in alittle water until just tender. Drain thoroughly. 4. Beat the milk mixture and green cabbage into the mashed potato using a wooden spoon until the mixture is light and fluffy. Reheat gently ad seasoning to taste. 5. Turn the potato into a warmed dish and make a well in the center. Place the remaining butter in the well and let it melt. Sprinkle with extra scallions |
