Chicken, pork or Veal Cutlets
2-3 well beaten eggs
1-2 c. breadcrumbs
1 c. pecorino cheese
2 T. fresh basil minced (1 1/1 t. dry)
2 T. fresh parsley (1 1/2 t. dry)
salt and coarse black pepper
olive oil
garlic

Directions:
Directions:
Pound cutlets between 2 pieces of saran wrap until even and thin. Soak in beaten eggs. Dredge in mixture of breadcrumbs, cheese and spices. Cover bottom of frying pan with oil and add a few slices of garlic. When it sizzles add cutlets and cook on each side until done. Drain on paper towels.Completely clean pan for each batch !

These are basic cutlets and can be served as is ,milanese, parmesan ,with toppings or in salads.
