1 lb. mahi mahi (fresh fish highly recommended)
1/2 c. olive oil
1/2 c. soy sauce
1 tbsp. onion powder
1/2 tsp. pepper
2 cloves garlic, crushed
1/4-1/2 c. finely chopped onion
8 oz. sliced mushrooms

Combine marinade. (Marinade is enough for 2lbs. of mahi mahi but you will likely only need 1 lb for 4 servings.)

Wash fish and pat dry. Place fish in glass dish. Pour marinade over fish and then flip fish over so that skin side is on top and fish side is soaking in marinade at bottom of glass dish. Refrigerate for 1-4 hours - the longer the better. Flip fish over before baking so skin side is on bottom of pan. Place mushrooms on bottom of pan, so that they are directly underneath fish before placing fish back in pan after flipping. Bake in 350 degree oven until fish is flaky.

Approx. 35 mins. for 1 lb and 40-45 for 2lbs. Some have used portabello mushrooms but white works just as good! Super easy and delicious!!!
