1 (4 oz.) Thin white fish fillet
2 oz. Flour
˝ tsp Salt
TT Pepper
1 oz. Oil, blend
1 oz. Butter, diced
˝ oz. Sliced Almonds
1 tsp Parsley, finely chopped
2 tsp Lemon Juice, fresh

Directions:
Directions:
• Combine the flour, salt and pepper. Dredge the fillet in flour and shake off excess.
• Heat oil in a suitably sized sauté pan. Make sure oil is hot but not smoking.
• Add the fillet and cook until golden brown on the presentation side.
• Flip the fillet and cook until golden brown on the second side. Remove from the heat.
• Remove the fillet from the pan and place on a serving plate. Keep warm in a 200 degree oven.
• Place the whole butter in the sauté pan used for the fish. Return the pan to a medium high heat. Allow the butter to melt then add the almonds.
• Allow the almonds to toast slightly then remove the pan from the heat and add the lemon juice and parsley. Taste and adjust seasoning.
• Spoon the sauce over the top of the fish and serve hot.
