1 T Olive Oil
1 clove Garlic, minced
1/4 Onion, minced
3 oz. Spanish hard Chorizo, diced
2 lbs. Mussels, cleaned
1/2 C White Wine
1 pnt Cherry tomatoes, halved
2 T Italian Parsley, minced
1 T Butter
1 Loaf Crusty French Bread

Directions:
Directions:
* In a large sauce pot, heat over medium high heat.
* Add olive oil, garlic and onions. Saute until fragrant.
* Add the Spanish chorizo, stir to combine.
* Add the mussels and cover. Allow the mussels to steam for 6-8 minutes or until all of the mussels have opened.
* Add the white wine and steam for another 1-2 minutes.
* Add cherry tomatoes, parsley and butter, stir to combine.
* Season with salt and pepper to taste.
* Serve with crusty French bread and a garden salad.

* This recipe works great with clams as well.
