1/2 cup butter
1/2 cup flour
2 1/4 cups milk
6 ounces Velveeta cheese, cubed
Salt and pepper to taste.

In medium sauce pan, melt butter over medium heat. Whisk in flour until thoroughly combined. Add milk, stirring constantly. Simmer until thick and bubbly will stirring constantly. Add cheese and remove from heat. Let sit for a few minutes. Stir well to mix cheese in. Salt and pepper to taste.

Goes well with cauliflower, broccoli, and asparagus. Leftovers good on omelets.
