Ingredients: 1 Potato diced 1/2 Onion diced 1 Broccoli Head cut up Mushrooms sliced Pickled Jalapeņos for the Kitchen Heat 3/4 c. Favorite Meat (Ham, Bacon, Steak, Sausage, Kielbasa...) 2 c. Cheddar Cheese shredded 1 c. Asiago Cheese (or whatever rank smelling cheese you like) shredded 8-10 eggs (How's your cholesterol now?)

Directions:Hopefully your favorite frying pan is at least 10 inches in diameter because you're going to be using it to saute most everything in the list of ingredients. Start with the favorite meat over medium heat and then toss in the veggies. Make sure that if your meat hasn't supplied enough fat to cook the veggies that you slap a tablespoon or 2 of real butter in the pan--we need to support the dairy farmers.
While that's cooking begin to beat the living daylights out of all the eggs. The more you beat them, the fluffier the dish will be--and if you eat a lot of these you will be, too. Once the veggies and meat are ready add the beaten eggs to the pan--hopefully you're not using a crepe pan, otherwise you'll have a big mess. Now that you're back on track with the cooked veggies and meat and beaten eggs all in the right kind of pan over medium heat you can sprinkle the shredded cheddar around the edges of the mixture. This will allow the edges to get crispy with the oil from the cheese helping to lubricate the pan. Then add the shredded rank smelling cheese on the top of the middle of the mixture and then place under the broiler in the oven on about the middle rack to finish cooking. Keep an eye on it so that it doesn't burn. It won't taste very good if it burns. You should be able to eat it in about 20 minutes after putting it under the broiler. |

Notes: Cindy raves about my cooking when I do these. I think that it might be because I use whatever is in the fridge and clean out the questionable articles as ingredients. You might spend more time than the allotted 30-45 minutes depending on how bad the stuff in the fridge is.
