Meat Sauce:
1 lb pork sausage 1 qt. tomato sauce
1 large onion, chopped 2 C. Burgundy
2 cloves garlic, minced 2 large cans tomato paste
2 Tbsp. Italian seasoning

Brown sausage; add onion and minced garlic. Cook until onion is transparent. Add the Italian seasoning and the Burgundy. Simmer for 20 minutes, then add the tomato sauce. Simmer 15 minutes and add the tomato paste. Cook over low heat and stir often for about 30 minutes.

Cheese Mixture:
3 C. small curd cottage cheese 1 tsp. salt
1/2 C. grated Romano cheese 3 eggs
2 Tbsp. parsley flakes

Combine all and set aside.
1 pkg. lasagne noodles, cooked and drained
1/2 lb. Mozzarella cheese

In ungreased baking pan (9X13) layer 1/4 each of the noodles, meat sauce, the cheese mixture and Mozzarella cheese, ending with Mozzarella on top. At this point, the dish can be refrigerated or frozen or baked.
To bake: Preheat oven to 350 degrees and bake for 45 minutes. Allow an additional 15 minutes if lasagne has been refrigerated. For easier cutting, let stand 15 minutes after removing from oven.

The meat sauce is a double amount for this dish and half of it can be saved for spaghetti or frozen for another time for lasagne. It does freeze well. Also note, it is a very thick sauce and is made this way so the lasagne will set up better for serving. My family likes a thick spaghetti sauce as well.
