1 c. coucous
1 1/2 c. chicken stock
1 tsp. ground cumin
salt and peppers to taste
Cayenne pepper (optional)
1/2 c. each of chopped seedless cucumber, red and green peppers
2-3 green onions chopped

Dressing:
1 tbsp. olive oil
1 tbsp. lemon juice

Directions:
Directions:
In microwave bring chicken stock and cumin to a boil. Stir in coucous and let stand, covered for 5 minutes.
After 5 minutes, fluff coucous with a fork. Add remaining ingredients including dressing. Serve warm or cold.
