Box of Matzo Farfel - use 1/2 box
2 eggs
1/8 cup water
Vegetable Oil
Lipton Onion Soup Mix
Mushrooms - small container - sliced
Red Peppers - 1 medium size - cubed
2 T butter or substitute for butter (smart butter)

Directions:
Directions:
In a large bowl mix 2 eggs and add 1/8 cup water. Add the matzo farfel and coat matzo in the egg mixture, allowing it to soak up the mixture. Remove matzo and spread out on a large paper towel to remove excess liquid.
In a large frying pan, add oil and heat pan. When pan is hot, and the coated matzo and frying on both sides breaking up the matzo so they are in little pieces. Once fried and slightly crunchy, remove matzo and place in a large soap pot. Put aside.
In a frying pan, saute the mushrooms and peppers in the butter or smart butter until golden and cooked.
Add the mushrooms into the matzo farfel mixture and stir in the veggies. Add a package of the Lipton soup mix and enough water to cover the matzo only 1/2 way.

Cover the pot and cook, stirring occasionally until the water is absorbed and the matzo is done.

Remove the matzo and put on a serving dish. Adding a little gravy drizzled over the top before serving adds flavor .
