small young beets peeled

Syrup:
2 cups sugar
2 cups vinegar
1 tsp. allspice
2 cups water
1 tsp. cloves
1 thinly sliced lemon
1 tbsp. cinnamon

Directions:
Directions:
Select small young beets and cook until tender dip into cold water and peel off skins and cut into slices or chunks. Mix up the syrup and pour over beets simmering for 15 min. and pack into hot sterilized jars with a little grated horseradish which gives it a good taste...and then seal.

This is an old recipe handed down for many generations. It is wonderful if you like pickled beets (which is one of Barbara Ready Coan's favorite vegetables) As Grandma Clara Ready said, this was the only vegetable she could get Barbara to eat when she was a baby. She would spit out all the other vegetables.
