4 servings regular or quick grits (not instant)
1/2-3/4 lb. bulk sausage
1 small onion, optional
1 green pepper, optional
salt/pepper and spices to taste
1 tbsp. Worcestershire sauce
3 eggs
little milk
1 cup of shredded cheese
little butter

Directions:
Directions:
Cook regular or quick grits (not instant) according to directions. Make them on the thick side and not too thin. Make 4 servings. Cook 1/2-3/4 lb. bulk sausage in a pan, chopping as you cook. Drain the fat off and put fat back in pan. Set aside sausage. Chop a small onion and a green pepper and cook in sausage fat. Add salt/pepper and spices if you like it hot. 1 tbsp. Worcestershire sauce adds a good taste. Beat 3 eggs and add a little milk. Slowly mix in some grits with the egg mixture until you have added a cup. Then return all to the grits and mix well. Add sausage and a cup of shredded cheese. Melt a little butter in a casserole dish and add everything else. Bake at 350 degrees for 25-45 minutes or until it sets.
