1/4 c. butter
1 1/2 c. uncooked white rice
3 c. chicken broth
3/4 c. shredded carrot
3/4 c. sliced green onion
3/4 c. slivered almonds
1/2 c. chopped parsley

Directions:
Directions:
Preheat oven to 350º

Melt butter in skillet.

Add rice, toss rice in butter, cook until rice is brown (about 5 minutes).

Combine rice and broth in a 2 quart casserole dish and bake, covered, for 45 minutes.

Remove dish from oven, stir in carrots, onions, almonds and parsley, return to oven and bake an additional 10 minutes.
