1 9" pie crust
1 16 oz can of mashed cooked pumpkin
3 lrg eggs separated
1 14 oz can sweetened condensed milk
1/2 cup flaked coconut
1/4 cup water
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
dash of salt

Directions:
Directions:
Prick crust and bake at 425º for 5 minutes. Combine pumpkin, egg yolks, mild and next 6 ingredients. Pour into pie crust. shield crust with foil and bake at 400º for 30 minutes.

Make meringue, top the pie and brown.

I used to make this for Lem at Thanksgiving. It was his favorite holiday and couldn't go without Pumpkin Pie. He was so happy when I found one that had meringue!
