2 1/2 pkg cream cheese
16 oz sour cream
3 eggs
1 tbsp vanilla (I always us Watkins)
1 1/4 cup sugar
graham cracker crumb (crush up some Teddy Grahams)

Directions:
Directions:
put graham cracker crumbs in the bottom of a spring form pan
mix all other ingredients and pour over crumbs
bake at 350º for 60 minutes or until brown
turn off the oven and let it sit in the oven for 1 hour
DO NOT OPEN THE OVEN
then chill over night in the refrigerator
YOU MUST LEAVE IN THE FRIDGE OVERNIGHT OR IT WON'T BE GOOD
add the topping you like before serving
I like to let it sit at room temperature for a few minutes

This is a recipe that I got from a friend that was stationed in Germany with us. I changed it a little to my taste. He and his wife were from New York. Lori was in the Air Force and Kevin acted as the only stay at home Mom on our small base. We both had two girls who played together often. We met in the local hotel in Kerpen, Germany as we waited for housing to open up for us. Lori is a dear friend that I still keep in touch with. We had many a New York style cheesecakes while living in Germany.
