3 egg whites
1 c sugar
1 tsp vanilla
20 Ritz crackers crushed fine
1 cup chopped pecans

In medium bowl, beat egg whites stiff, add sugar, vanilla, and chopped nuts. Then stir in Ritz crackers. Pour into well buttered 8" pie pan and bake exactly 30 mins. at 350º. Cool in refrigerator 2 hours. Then prepare one packet of Dream Whip for one pie. DO NOT USE COOL WHIP.
Spread all over pie and allow to set in refrigerator over night. Be sure to read my personal note.

When Mom gave our neighbor, Mrs. Edwards, this recipe in the 1960's, she removed it from the oven and thought it didn't turn out right because it was too hard and slid right out of the pan. So, when this happens to you, don't be alarmed, that's how it should be. The Dream Whip topping will soften it over night.
