4 c. quartered small new (red) potatoes
4 slices bacon, cooked and crumbled
2 eggs, chopped
1/4 c. red onion, chopped
1/4 c. green onion, chopped
1 c. mayo (I usually use 1/2 c mayo; 1/2 c salad dressing)
salt & pepper to taste

Directions:
Put quartered potatoes on baking sheet. (I usually either drizzle with olive oil or spray pan over the top so they don't stick). Bake at 425º for 30-35 min. Stir halfway thru cooking time to ensure they brown on all sides. Mix all other ingredients and set aside until potatoes are done. When done, mix all together. Serve either warm or cold.

I usually double this recipe for a family of four. This is my favorite and easiest potatoe salad!
