1 pound bulk sausage (hot or mild)
1 28 oz can of petite diced tomatoes
3 tbsp flour
Salt/Pepper to taste
Milk or half-n-half

Directions:
Directions:
Crumble and brown sausage in a large skillet.
Drain sausage, but leave 3 tbsp of fat/drippings in the pan. Add flour to pan to make a roux. Remove all lumps.Stir in tomatoes and juice.Add enough milk to dilute into gravy consistency. Return sausage to gravy and allow to thicken. Simmer 10 minutes. Serve over rice or biscuits.

You can substitute ground beef or ham. If you don't have pan drippings, just use butter 1:1 ratio with the flour.
