1 (10 oz.) pkg. baby spinach
1/3 lb. blue cheese, crumbled
1 (6 oz.) can walnut halves, toasted
1/4 C. maple syrup, warmed
1 1/2 Tbs. cider vinegar
1/4 C. olive oil
1 small red onion, thinly sliced
Salt and pepper to taste

Directions:
Place spinach in a large bowl. Top with sliced onions, cheese and walnuts. Warn the maple syrup in a small saucepan. Whisk together the oil and vinegar. Whisk in maple syrup into the dressing in a slow stream. Pour dressing over the salad and serve. Season with salt and pepper. Serves 4.

I just love this salad! It's very similar to one I've enjoyed at the Whistling Swan in Sturbridge, Ma. on numerous occasions.
