8 oz. almond paste
1/3 c egg whites (2-3 eggs)
1 c sifted powered sugar
½ c sugar

Directions:
Directions:
Preheat oven to 400º F. Line baking sheets with parchment paper (do not use waxed paper). Combine almond paste and ¼ of egg whites in medium bowl and blend with electric mixer at low speed until combined. Add remaining egg whites with sugars and blend about 2 minutes, do not overly mix. Spoon mixture into pastry bag fitted with No. 8 plain round tip. Pipe onto prepared baking sheets in rounds about 1” apart. Bake until lightly colored, about 10 minutes. Slide macaroons (still on parchment) onto racks. Cool completely, then carefully peel off paper. Store in an airtight container.
