2 packs chopped spinach, thawed and squeezed.
8 oz egg noodles cooked
16 oz of large curd cottage cheese
1/2 c Parmesan cheese grated
2 to 3 T of olive oil
3 large cloves of garlic
1 Tbs dried basil
1 Tbs of dried or fresh parsley
salt and black pepper to taste

Directions:
Thaw and squeeze all of the water out of the spinach set aside. Heat olive oil, add garlic and cook until soft..don't burn it,,, Add the spinach, salt, pepper, basil and parsley. With a fork separate the leaves and heat about two minutes. Add cottage cheese and mix well heat until just bubbling. Add egg noodles, fold until mixed and top with ground black pepper and cheese.

I found this recipe in a Jane Brody cookbook years ago and is a favorite. Very filling for a meatless dinner.
