mayonnaise
Tony Chachere's
2 Tablespoons capers
Parmesan cheese
Pesto sauce
Extra Virgin Olive Oil
1/2 Half and Half

Directions:
Directions:

Cut Salmon in appropriate sizes.
Line cookie sheet with foil.
Using spatula cover each piece with mayonnaise. (I prefer Helman’s).
Sprinkle Tony Chacheres (seasoning mix) over Salmon.
Mince 2 tablespoons of capers and spread on top of Salmon.
Sprinkle Parmesan cheese along with a lite touch of bread crumbs lightly on top. Pat down into fish lightly.

Pre-heat oven to 350 degrees.
Cook for 15 minutes on the middle rack. Check for doneness. Could place on broil if desired.

Serve on top of Pesto Pasta

Place Pesto sauce into frying pan with additional Extra Virgin Olive Oil. Once it bubbles add ˝ cup “Half and Half”. Reduce heat and add cooked pasta to sauce.
