2 1/2 to 3 lb. boiler fryer chicken
1 to 2 qt. water
4 to 8 carrots, cut (2 to 4 cups)
4 to 8 stalks celery, cut (2 to 4 cups)
1/2 cup Cilantro
1 to 2 tsp. salt
1/4 to 1/2 tsp. pepper
3 to 6 chicken bouillon cubes,
or Maggi Seasoning
2 cups Star noodles

Directions:
Fill large pot with water add chicken and all seasonings and boil until chicken starts to fall off bones. Take chicken out of pot and let it cool down so you can carefully remove all the bones.
Skim fat of the top of the broth, while the chicken is cooling down, add carrots celery, cilantro and noodles, add more water to soup if needed, bring to boil and then simmer for 10-15 minutes.
Add the chicken ( cut into small pieces) back to the soup. Add spices as needed to your taste, a little lemon juice will add a light fresh taste.

Do not use regular noodles only "soup noddles" they don't soak up all the water. Our Family likes to use Star shaped soup noodles.
