2 T. oil
2 T. all purpose flour
1 cup finely chopped onion
1-1/2 cup finely chopped scallions
1 cup chopped celery
1 cup chopped green pepper
1 T. chopped garlic
1 cup cubed ham
2 cups canned crushed tomatoes
1/2 tsp. dried thyme
1 tsp. dried oregano
1/2 cup long grain rice
1/2 tsp. red pepper
6 cups shrimp broth
2 lbs. shelled and deveined shrimp
salt and pepper to taste

Directions:
Directions:
Heat oil in heavy bottom soup pot over medium to high heat. Add the flour and cook, stirring constantly until lightly browned. Add the onions, scallions, celery, green pepper and garlic until wilted. Stir in ham, tomatoes, thyme, oregano, rice, hot pepper and shrimp broth. Bring to a boil, stir well and cook for 30 minutes. Add the shrimp and simmer for 5 min. or more. Adjust the seasoning with salt and pepper in needed.
