1 jar (14 oz) pizza sauce
5 1/4 - 5 1/2 cups of beef stock or water
1 large green bell pepper, seeded and chopped
1/2 large red onion, chopped
1 cup diced mushrooms
1 regular can diced tomatoes
1 small can sliced black or green olives, drained
2 mild italian sausages, removed from casings
1 cup sliced pepperoni, cut into quarters
1/2 tbsp dried basil
1 tbsp dried oregano
3 cups dried rigatoni
Shredded mozzarella cheese
Shredded parmesan cheese

Directions:
Directions:
Place washed and prepared vegetables in crock pot along with diced tomatoes and olives. Remove italian sausage from casings, crumble and brown in a pan; drain and add to crock pot along with pepperoni.

Pour in jar of pizza sauce and beef stock or water. (Use as much or as little of beef stock or water as you like. Depends on how soupy or non-soupy you prefer the dish to be.) Mix in basil and oregano. Cover and cook on low for 7 - 9 hours, stirring occasionally.

20 or 30 minutes before serving, add the dried rigatoni and turn crock pot to high. Pasta cooking time depends on how al dente you prefer yours to be. When rigatoni is cooked, soup is ready to serve.
Top with shredded cheeses. Serve with a fresh salad and garlic bread/toast. Enjoy!
