10 cups sliced peaches
10 cups sugar

Directions:

1. Wash, peel and slice peaches.
2.Sterilize canning jars.
3. Combine fruit and sugar in a large heavy stainless steel or enamel kettle; let stand at room temperature for 1 hour.
4. Set kettle over low heat and cook until peaches turn transparent, stirring often for 20 minutes.

5. Turn heat to medium or high and boil steady, stirring often to prevent sticking. Cook until fruit and syrup drop from a spoon all at once.

6. Remove from heat and stir foam down.

7. Pour hot preserves into hot jars, leaving 1/4 inch head space. Wipe jar rims and adjust lids. Process 5 minutes in a boiling water bath.
