2 pounds baking potatoes (drier)
3 eggs
salt to taste
2 c. white flour
bouillon
butter
Parmesan

Directions:
Directions:
Boil potatoes until done then drain. Put through ricer. Mix in 3 eggs and salt to taste. Add approximately 2 cups flour to make a dough. Dough should be soft and elastic. Roll dough out into "snakes" and cut snakes into 1-inch pieces. Drop the dumplings into boiling bouillon water. Cook 5-8 minutes. Drain well. Place in buttered baking dish. Drizzle with butter and sprinkle grated Parmesan cheese over top. Bake at 375º for 15 minutes. Serve with marinara sauce; or with cooked sausages and sauerkraut; or with pork chops and applesauce.
