yellow cake mix
3 egg whites
1/3 cup unsweetened applesauce
1 small can mandarin oranges in juice
8 oz. Cool Whip Lite
1 pkg. sugar free vanilla instant pudding mix (dry)
1 small can crushed pineapple in its own juice

Directions:
Preheat oven to 350º. Spray 13x9 pan. Mix together cake mix, egg whites, applesauce, oranges with juice. Pour into prepared pan. Bake about 30-35 minutes or until toothpick comes out clean. Cool cake completely.

Meanwhile, mix with spoon (do not use mixer) Cool Whip and pineapple with juice. Then sprinkle pudding mix over top and mix in. DO NOT OVERMIX!

Spread over cooled cake.
