Noodles:
1 cup sifted flour
Pinch salt
4 eggs
1 cup milk

Filling:
1 lb. ricotta cheese
1 1/2 lb. mozzarella cheese, grated
2 raw eggs
1 bunch parsley chopped (maybe less)

Noodles:
Mix in blender. Fry on med temp griddle or skillet like pancakes, about 3 1/2" in diameter. Do not brown. Set aside.

Filling:
Mix all ingredients thoroughly.. Place on noodle and roll like enchilada. Place in dish and cover with marinara sauce. May be layered with marinara but I like just one layer.
Bake at 350 degrees for 1/2 hour.
May be frozen. May also be served with grated Parmesan.
