2 lbs lean big game meat
1 lb fat pork trimmings
1 1/2 tbsp. salt
1 tsp. onion salt
1 tsp. mace
1 tsp. marjoram
1 tsp. pepper
1/2 cup milk
Pork or lamb casing*

Directions:
Directions:
Meat has to be well-chilled and must be trimmed of blood clots and tough ligaments. Grind game meat and pork through the finest blade of a grinder. Mix thoroughly with spices and milk.
Stuff into casings and link or cut into serving size pieces. Sausage will keep for 2 to 3 days in the refrigerator. Fry sausages slowly in oil or grill until done.

Serve with fried potatoes, sauerkraut and mustard.
Sausage is made without cure and therefore, will not have a pink color.
