One-Bowl Chocolate Cake Recipe

1 1/2 cups cocoa (plus more for pans)
3 cups flour
3 cups sugar
1 tbsp. baking soda
1 1/2 tsp. baking powder
1 1/2 tsp salt
3 large eggs
1 1/2 cups buttermilk
3/4 c. vegetable oil
1 1/2 tsp. vanilla

Heat oven to 350ºF. Butter 2, 8x2 inch round, or square cake pans, line bottom with parchment; butter & dust with cocoa. For Gumdrop Mountain cake, also butter & dust a 8" diameter stainless steel bowl. In electric mixer, sift cocoa, flour, sugar, baking soda, baking powder, & salt.
On low speed, stir in eggs, 1 1/2 cups warm water, buttermilk, vegetable oil, and vanilla until smooth, about 3 minutes. Divide batter between pans including bowl if using, or a scant 1/3 cup batter in cupcake liners. Bake rotating once, until tester inserted comes clean, about 35-45 minutes for 8" layers, 50-55 for bowl and 20-25 minutes for cupcakes. Let cool on wire racks for 20 minutes then remove completely.
Chocolate Icing:
1 1/2 cups unsalted butter
1/2 cup whipping cream
1 tbsp vanilla
3 cups icing sugar
6 ounces unsweetened chocolate, melted & cooled.
Beat butter until fluffy; gradually beat in cream, vanilla. Beat in icing sugar, 1 cup at a time. Beat in melted chocolate until fluffy and smooth.

1 8" bowl cake

Gumdrops to decorate
