2 1/2 cups graham cracker crumbs
2 Tbsp sugar
1/2 cup butter, melted
3/4 cup milk
3/4 cup Irish Cream liqueur
1 tsp Vanilla Extract
2 cups heavy cream
2 Tbsp powdered sugar
2 Tbsp amaretto
1 cup semi-sweet chocolate chips
1 Tbsp unflavored gelatin

Combine graham cracker crumbs and sugar in a medium bowl. Stir in melted butter until thoroughly mixed. Press into a 9 inch pie plate. Chill.
Place milk and Irish Cream Liqueur in a medium heavy saucepan. Sprinkle gelatin over milk mixture and let stand for 1 minute. Cook over low heat, stirring constantly, until gelatin is completely dissolved. Add chocolate chips and stir until melted.
Remove from heat and add vanilla extract. Beat mixture with a wire whip until chocolate is blended. pour into a large bowl and chill, stirring occasionally, until mixture thickens, about 20-25 minutes.
Whip 1 cup of cream until soft peaks form. Fold into chocolate mixture, gently blending until no white streaks remain. Pour into chilled crust. Place in freezer for 15 minutes, then remove and cover with plastic wrap. Return to freezer and freeze several hours or overnight.
When ready to serve, place the remaining 1 cup of cream in a deep bowl with the powdered sugar and amaretto. Whip until soft peaks form. Place a generous dollop on each slice of pie.
