5 lb. boneless eye of round or rump roast
1/4 c. instant minced onion
1/4 tsp. instant minced garlic
1 tbsp. salt
1-1/2 tsp. pepper
3/4 tsp. cayenne pepper
3 tbsp. water
1/4 c. vinegar
1 tsp. cornstarch
1 tsp. water

Combine first 7 ingredients; let stand 5 minutes to soften. Cut 1 in. slits & fill each with 1/2 tsp. of mixture. Cover, marinate overnight in refrigerator. Place roast on rack in roasting pan. Cover with foil; bake at 325º for 3-1/2 hours or until tender; removing foil 40 minutes before time is up to permit meat to brown. Remove roast to platter; skim fat from pan. Blend cornstarch with water; add to drippings & stir until slightly thick. Serve with rice or potatoes and gravy.
