4 each russet potatoes, large, rough chopped
2 ears of sweet corn
1/4 c heavy cream
6 T kosher salt
4 oz. unsalted butter
1 c milk
Water as needed
salt and pepper to taste

Directions:
Preheat oven to 350º.
Oven roast the corn, still in the husk for about 1 hour. Remove the corn kernels off the ears. In a large pot combine the water, salt, and potatoes. Boil for about 1 hour. Empty the potatoes in a large callender. While the pot is still hot combine the butter, cream, and milk. Mash the potatoes. Mix potatoes with butter mixture thoroughly. Add the corn. when all ingredients are thoroughly mixed, season to taste with salt and pepper.
