2 1/2 lbs. potatoes, (7 medium)
1 lb. shredded cheeses (4 c.) mozzarella and cheddar
1/2 c. onions, grated
1/4 lb. butter (1 stick)
1/2 lb. lasagna (9 noodles)

Directions:
Directions:
Boil potatoes in 3 qts. water with 1/2 tsp. salt, 20 minutes. While potatoes are boiling, saute' onions in 1/2 butter in small saucepan. Mash potatoes in rest of butter, then add onions. Cook lasagna in 3 qts. water with 1 T. oil and 3/4 tsp. salt, 10 minutes, and rinse with cold water. Grease or spray 9 x 13 pan. Three layers: First two layers each; 3 noodles, 2 1/4 c. potatoes, 1 1/3 c. cheeses and last layer; 3 noodles and 1 1/3 c. cheeses only. Cover casserole. Put in cold oven and set at 325º, 40 minutes. 12 servings.
