3 T canola oil
1 c chopped onions
1 T minced garlic
2 tsp minced fresh ginger
1 T ground coriander
1/4 tsp cumin
1/4 tsp cinnamon
1/8 tsp cayenne
1/8 tsp turmeric
1 c drained canned tomatoes
2 1/2 c unsweetened coconut milk
1/2 c water
1 tsp salt
3/4 c fresh cilantro
1 1/2 lbs large shrimp, peeled and cleaned
lime wedges for garnish

Directions:
Directions:
Heat the oil in a large skilled on medium high heat. Add the onions and cook for 3 minutes. Add garlic and ginger and cook for 2 minutes. Add the next 5 spices and cook for 1 minute. Add tomatoes, cook for 1 minute. Add coconut milk, water, and salt, and bring to a simmer. Simmer until thickened, approximately 5-10 minutes. Add shrimp and simmer, stirring occasionally, for 5 minutes. Stir in cilantro. Serve with rice and lime wedges for garnish.
