1 ½ sticks ( ¾ c) butter, softened
1 ½ c firmly packed brown sugar
2 large eggs
2 tsp vanilla
½ tsp salt
1 ½ tsp baking powder

1 ½ c flour

Directions:
In a bowl with an electric mixer cream together butter and brown sugar until it is light and fluffy; add eggs, one at a time, beating well after each addition, add vanilla. In a small bowl whisk together salt, baking powder and flour; add the flour mixture to the butter mixture, and beat the batter until it is just combined. Stir in coconut and chocolate chunks (reserving ¼ cup to distribute on top before baking); spread the batter evenly in a buttered (sprayed) and floured 13 x 9" baking pan. Sprinkle chunks on top. Bake in a preheated 350º oven for 25 to 30 minutes, or until it begins to pull away from the sides of the pan and crumbs adhere to a tester. Let blondies cool completely before cutting into squares.
