1 lb S-shaped pasta
1/2 lb apple-wood-smoked bacon
1 1/2 c fresh white bread crumbs (from 5 slices bread
without crusts)
1/2 c grated Parmigiano-Reggiano cheese
8 T butter, divided1 head garlic, minced
1/4 c minced shallots
1/2 c flour
1 qt whole milk
1/2 t pepper
1 t salt
1/4 t grated nutmeg
6 oz Gruyere cheese, grated
8 oz extra sharp cheddar, grated

Cook pasta according package directions, drain
Cook bacon completely, drain on paper towels, crumble when cool. Save 1 T bacon fat.
Combine: breadcrumbs, crumbled bacon, Parmigiano cheese and 2 T melted butter. Set aside.
Preheat oven 375º. Saute shallots and garlic in bacon grease until translucent. Add flour and stir 1-2 min. Increase heat to medium, stir constantly and add milk. Cook until thickened (coats the back of a spoon). Add salt, pepper, nutmeg, and 2 cheeses. Stir in cooked pasta. Pour into 3 qt. baking dish. Sprinkle topping over casserole and cover with foil. Bake 15 min. Remove foil and bake until sauce is bubbly and topping is browned
