1 beef tenderloin, 3 lbs, large end
12 1/4" garlic slices
1 Tbs coarsely ground black pepper
1 pound bacon slices
3 long rosemary stems, about 8" long

Directions:
Directions:
Preheat oven to 450º. Using sharp knife, cut 12 ,1" deep slits all over loin and press garlic slices into holes. Rub pepper all over loin, arrange bacon slices on working surface, overlapping slightly and forming a rectangle. Place 1 rosemary stem down center, perpendicular to bacon. Place loin on top. Place remaining 2 rosemary stems on top of the loin and wrap to enclose completely. Place in roasting pan, ends down. Roast to 125 º internal temperature, about 1 hour. Remove. Tent with foil and allow to stand for 10 minutes. Cut in 1/2" slices. Garnish with rosemary stems.
