1 1/8 tsp minced peeled fresh ginger
1 1/8 tsp minced garlic
2 1/4 tsp canola oil or peanut oil
3/4 tsp ground coriander seeds
1 1/2 tsp curry powder
1 1/2 tsp Thai red curry past (start with 1/2 tsp and taste it, this stuff can be hot)
1 1/2 tsp paprika
3/4 tsp ground cumin
1 1/4 cups well stirred unsweetened coconut milk
3 Tbs. tomato puree
1 Tbs. soy sauce

Directions:
Directions:
In a large saucepan, heat oil and add spices and cook til fragrant, a minute or 2. Whisk in the liquid ingredients. Cook to reduce to desired consistency.
