1 tbsp. olive oil
1/2 cup chopped onion
1 garlic clove, minced
1 tbsp. flour
1/2 cup chicken stock
2 cups chopped green chile (roasted, skins and seeds removed)
1/2 cup tomato, fresh or canned
1/2 tsp. ground cumin
Salt to taste

Directions:
Directions:
Cook onion in hot oil a few minutes, then add garlic and cook until softened. Stir in flour. Cook 2 minutes, then slowly add stock. Add chile, tomato, and cumin. Cover and simmer 20 to 30 minutes, stirring occasionally. Add water or chicken stock as sauce becomes too thick. Salt to taste. Makes approximately 3 cups.
