1/4 c. flour
1/2 tsp. pepper
1 lb. tilapia fillets
2 tbsp. oil
2 tbsp. rice-wine vinegar
1/4 c. reduced-sodium soy sauce
2 tbsp. sesame seeds
2 tsp. bottled chopped garlic
2 tsp. bottled chopped ginger
(actually, I cheat and use garlic and ginger powder to taste)
12-16 oz. fresh spinach

Place flour, pepper and fish into ziploc bag and shake to coat. Heat oil on med-high in large skillet and cook fillets until begin to brown (about 3-4 min per side). Set fish aside. Add vinegar, soy sauce, garlic, ginger and sesame seeds to skillet, and stir. Add spinach in batches and toss until wilted. Replace fish and heat for a couple of minutes
