2 cups self raising flour, 1/2 tsp. salt, 1 1/2 cups milk, 1 tsp. sugar, 1 tsp. butter. (See variation below).

Icing: 1 cup confectioner's sugar, 1 T. warm water, food coloring to obtain a pale color.

Sift together the flour, sugar, and salt into a bowl and then add the butter, add enough milk to make a manageable dough. Shape into a flat ball and place on a greased and floured baking sheet. Bake at 400º for 25-30 minutes. Baste with milk during cooking.

A variation is to add sugar and golden raisins to the dough (until sweet). Ball of dough can be almost cut into 8 wedges. Bake at 350º for 30-40 minutes.

Icing: Drizzle over the top of cooled damper and decorate with chopped walnuts

Serve hot with butter or syrup and jam. Roll in sugar if desired.

Damper is a traditional Aussie bread, originally cooked in the ground. We enjoyed it for breakfast while traveling in Australia. Variations can include adding sugar and golden raisins to the dough.
