1 small sweet onion
1 small red onion
1 c. white wine vinegar
1/2 c. sugar
1 T. coarse salt
1 bunch green onions

Directions:
Directions:
In medium bowl, combine sweet and red onion both halved and thin sliced. Cover with ice water, soak for 30 minutes, changing ice water once. Then drain and return onions to bowl. In medium saucepan, bring white-wine vinegar, sugar, and salt to a boil, stirring until sugar is dissolved. Pour over onions and set aside to cool, tossing occasionally. (I put them in a zip lock bag, and just kept flipping it over). When cool, add green onions cut in 2 in. lengths and slivered lengthwise. Season with pepper if desired. Refrigerate (up to two days).
